Washing raw poultry, beef, pork, lamb, or veal before cooking it is not recommended. Bacteria in raw meat and poultry juices can be spread to other foods, utensils, and surfaces. We call this cross-contamination.

Some consumers think they are removing bacteria and making their meat or poultry safe. However, some of the bacteria are so tightly attached that you could not remove them no matter how many times you washed. But there are other types of bacteria that can be easily washed off and splashed on the surfaces of your kitchen. Failure to clean these contaminated areas can lead to food-borne illness. Cooking (baking, broiling, boiling, and grilling) to the right temperature kills the bacteria, so washing food is not necessary.

Ingredients:-
1 kg chicken thigh and leg
200 grams fried onions
1/4 cup mint leaves
1/4 cup coriander leaves
1 tbsp coriander seed powder
1 tbsp jeera powder
1 tbsp red chilly powder
1/2 tsp turmeric powder
1/2 tsp pepper powder
200 grams curd
200 ml coconut milk
50 grams almond paste
1 tbsp lemon juice
4 tbsp oil
2 tbsp ghee
2 tbsp ginger garlic paste
8 green chilies slit
1 tbsp garam masala
1 pinch saffron

Method:-
– In a bowl, add yoghurt, blanched almond paste, coconut milk, ginger-garlic-green chilli paste, cumin powder, turmeric powder, red chilli powder, garam masala, coriander seeds, saffron fried onions, lemon juice, coriander leaves, mint leaves, green chillies, freshly crushed black pepper, vegetable oil, ghee, salt and whisk it all together.
– Add the chicken to this, cover and marinate for minimum of 2 hours or overnight for best results.
– Heat a kadhai on a high flame and pour the chicken and the marination in it.
– Cover and cook it on high flame for first 5 minutes and then on a low flame for 35 minutes.
– Turn the flame off and do not move the kadhai for 5 minutes.
– Serve with Naan or roti.

Delicious Hyderabadi Chicken is ready to serve.

Chettinad Chicken | South Indian Chicken Curry | Chicken Recipes | Recipe by Varun Inamdar

Today we are going to try a new South Indian chicken recipe by Chef Varun Chettinad Chicken Curry.  With this recipe making Chettinad Chicken will be as simple as making macaroni and cheese at your own home. Please follow the directions below and you will find that making this delicious spicy dish will be as easy as 123. Please let us know if you have any questions or comments on how this dish was prepared. We are very happy to provide all of our dishes to you.
For Marination:-
½ kg Chicken, Curry cut
½ tsp. Turmeric Powder
1 tbsp. Lemon juice
Salt as required

For Seasoning:-
2 tbsp. Sesame Oil
15 nos. Shallots (sliced)
Salt as required
3 sprigs curry leaves

For Chettinad Masala:-
1 tbsp. seasame oil
¼ cup fresh Coconut grated
2 nos. Bay leaves
3 tbsp. Coriander Seeds
6 nos.Red Chilli Bedgi
1 tbsp. Black Pepper
1 tsp. Cumin Seeds
1 tsp. Fennel Seeds
1 Green Cardamom
1 Black Cardamom
2 Black Stone Flowers
1 Star Anise
8 Cloves
1 blade of Mace
1 inch piece Cinnamon
6-8 cloves of garlic
1 inch Ginger
1 tsp. Tamarind paste
Pinch of fenugreek seeds
Water as required

Corriander for garnishing

Method:-
The marination:-
– Mix the curry cut chicken with lemon juice, turmeric powder and salt. Keep aside for 30 minutes.

The Chettinad Masala:-
– In a pan heat oil and add coriander seeds, fennel seeds, cumin seeds, black peppercorn, blades of mace, cloves, cinnamon stick, star anise, green cardamom and black cardamom. Saute while keeping the flame on moderate.
– Now add bay leaves, stone flower, garlic, dry red chillies and toast these spices till deep brown in colour.
– Transfer the roasted spices onto a plate and let it cool down to room temperature.
– In the same pan roast grated coconut on moderate flame until brown in colour and trasnfer onto a plate and let it cool down to room temperature.
– Once the roasted spices and cocont have cooled down, transfer them into a mixer/grinder and add fenugreek seeds, ginger, tamarind past and water. Grind everything to a fine paste.

The Seasoning:-
– Heat oil in a pan and add shallots, curry leaves and saute on medium flame until shallots are golden brown.
– Now add the marinated chicken and turn the flame on high and saute for 2-3 minutes.
– Once the chicken has seared well, add the Chettinad Masala, water, salt and bring it to a boil.
– Lower the flame, cover with a lid and let it cook for 15-10 minutes.
– Garnish with coriander leaves and serve hot.

Easy Homemade Chicken Curry (gluten-free And Low Fodmap)
Servings: 4

INGREDIENTS
4 boneless, skinless chicken breasts
1 tablespoon turmeric
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garam masala
½ tablespoon ground ginger
2 tablespoons white wine vinegar
Oil
1 red chili, chopped
400 grams chopped tomatoes
100 milliliters water
Salt, to taste
Pepper, to taste
Rice, to serve
Coriander, to serve

PREPARATION
1. Cut the chicken into bite-size pieces.
2. Season the chicken with turmeric, chili powder, cumin, garam masala, ginger, and white wine vinegar, and mix well.
3. Heat oil in a pot over a medium heat. Add the chicken and cook until brown.
4. Add the chili, chopped tomatoes, water, salt, and pepper.
5. Mix well and bring to a boil.
6. Simmer for 1 hour, until the sauce has thickened.
7. Serve with rice and chopped coriander.
8. Enjoy!

1 tbsp. Chilli powder

3 tbsp. Coconut oil
2” Cinnamon
¼ tsp. Asafoetida
1 tbsp. Garlic paste
1 tbsp. Ginger paste
2 cups Coconut milk
½ cup of finely chopped coriander
Salt to taste

Method:-
1. Marinate the chicken with salt, chilli powder, turmeric powder and yoghurt for 30 minutes.
2. Grind the chillies and onions to a thick paste.
3. Heat the coconut oil and add cinnamon, cumin seeds, asafoetida, ginger-garlic paste and sauté for a minute.
4. Add the onion paste and sauté for 4-5 minutes.
5. Then add coriander and cumin seed powder and sauté.
6. Add marinated chicken and fry for 3-4 minutes.
7. Add coconut milk, coriander leaves and cover and cook until the chicken is done.

Chicken Korma in Coconut Milk is ready to eat!

Butter Chicken Curry

Butter Chicken Curry is on tonight’s menu,  Is your mouth watering?

Butter Chicken Curry:

Yogurt Curry Marinade:
1 lb Chicken Thigh (sub with Tofu or Cauliflower or Chickpeas)
1 tsp Turmeric
1 tsp Garam Masala
1 tsp Cumin
1 tsp Kosher Salt
1 cup Greek Yogurt.
Mix together and marinate at least 20 minutes.

In a dutch oven or cast iron pot, add
3-4 tbsp Olive Oil
1 Onion cut into chunks. Saute 2-3 min then add
4 cloves Minced Garlic
1 1/2 tsp grated Ginger. Stir again for 2-3 min.
2 tsp Garam Masala
1 tsp Cumin
1 tsp Turmeric
1/4 tsp Cardamom
1/4 tsp Paprika
1/4 tsp Cinnamon

Stir to toast up.

Add the marinaded Chicken, mix well for about 5 min on med-high heat.

Add 2 cups Crushed Tomatoes. Stir and simmer 20 min on low heat.

Add 1/4 cup (4 tbsp) butter
1/2 cup Coconut Milk from a can
Salt to taste

Simmer 5-10 more minutes to thicken.

Serve over Basmati Rice (I cooked it with frozen peas and carrots) and garnish with a sprig of Cilantro
