My wife Ying is originally from Krabi, and one of the restaurants she ate at frequently when she was a kid going to school is Khanom Jeen Badom (ขนมจีนป้าต้อม), a long standing restaurant serving a variety of different curries with soft rice noodles known in Thai as khanom jeen (ขนมจีน).

In Krabi, khanom jeen (ขนมจีน) is typically eaten for breakfast or early lunch, and so we headed to the restaurant in the morning for breakfast. The restaurant was busy and hectic as always, and luckily we found some seats at a shared table and ordered.

Here’s what we had:

Khanom jeen nam ya kati (ขนมจีนน้ำยากะทิ) – This is one of the main types of curry noodles, made with coconut milk and deboned pureed fish, and curry paste. The noodles also came with an egg on the side. It was overall quite good, but not too spicy. I enjoyed eating it with some extra deep fried crispy chilies on top!

Khanom jeen gaeng tai pla (ขนมจีนแกงไตปลา) – One of my personal favorites types of southern Thai curry is khanom jeen gaeng tai pla (ขนมจีนแกงไตปลา), a type of curry made with fermented fish viscera. It doesn’t sound too appealing, but I really love it – the pungent salty flavor. This version wasn’t the best I’ve had, but it was still pretty good.

Gai tod (ไก่ทอด ชิ้นละ) – Khanom Jeen Badom (ขนมจีนป้าต้อม) is not only known for their Thai curry noodles, but also for their fried chicken, and the combination of curry noodles and fried chicken goes so well together.

Hor mok (ห่อหมก) – Finally, sitting on our table and begging to be eating were little banana leaf packets of hor mok (ห่อหมก), steamed seafood custard. It was pretty good, again, not the best I’ve ever had, but pretty decent.

Khanom Jeen Badom (ขนมจีนป้าต้อม) is a good restaurant in Krabi. The food is overall a little mild, but still good and pretty budget, and it’s a good local Krabi atmosphere.

This special Christmas 2011 episode of Bangkok street food is an introduction of Thai khanom jeen rice noodles topped with coconut curry sauce and raw vegetables.

It’s one of my many favorite Thai breakfast dishes!

Khanom jeen are Thai rice vermicelli noodles that are lightly fermented so they remain soft and silky.

They are best eaten with a few scoops of spicy coconut fish curry known as “nam ya kati” and eaten along with freshly chopped bean sprouts, cucumber, string beans, cabbage, and a few herbs and dried chillies!

Nasi Goreng, Indonesian Fried Rice Recipe

Nasi Goreng is just an exotic name for Fried Rice…so we hear! But it is amazing how the flavor is different for other Fried Rice. We love the fact that it can easily be made vegetarian or non-vegetarian. Traditionally, they do add Shrimp Paste to the dish but at my request Chef Sudabo showed me how it can so easily be transformed into a vegetarian dish. Thanks again Chef for allowing us into your kitchen!

Prep Time: 20 min
Cook Time: 20 min
Serves: 4-6

Ingredients:

Oil -2 tbsp
Butter – 2 tbsp
Garlic – 2 tbsp, minced
Chicken – 2 thighs, cut to strips (optional)
Eggs- 1. beaten
Rice – 1 cup raw rice cooked
Salt – to taste
Black Pepper Powder – to taste
Sweet Indonesian Sauce/Kecap Manis – 3 tsp or as needed
Shredded Cabbage- 1/2 cup, packed
Green Beans – 1/2 cup, cut diagonally
Carrots – 1/4 cup, shredded
Bell Pepper /Capsicum – 1/4 of Bell Pepper
Firm Tofu – 1/4 cup, cubed -optional
Sambal – to taste

Method:

1. Prep all the ingredients and keep aside.
2. In a wok-style pan, heat the Oil and add in the Butter and allow it to melt.
3. While it is still melting, add in the minced Garlic.
4. Add in the Chicken and cook till the Chicken Strips are white in color.
5. Add in the beaten Egg. Stir and cook.
6. Add in cooked and cold Rice. Mix and allow the Rice to heat up.
7. Season with Salt and Black Pepper.
8. Add in Kecap Manis/Sweet Indonesian Soy Sauce, and mix till there is no white Rice to be seen.
9. Add in the Vegetables and Tofu and mix well till everything is incorporated well.
10. Add in Homemade Sambal and give it one final mix.
11. Remove from flame and plate as desired.
12. In a small skillet, heat a tsp of Oil.
13. Break an Egg and cook as you would a fried egg.
14. Once done, season with Salt and Red Chilli Powder.
15. Plate on the Nasi Goreng and serve.

Tips:

1. Substitute Soy Sauce + Sugar for Sweet Indonesian Soy Sauce.
2. Leave out the chicken if you are a vegetarian.
3. Leave out the Eggs if you do not eat Eggs.
4. Substitute Chicken with Pork, Shrimps or any other kinds of meat.

Thai Fried Rice

Thailand’s answer to the chinese fried rice! long-grained rice sauteed with baby corn, capsicum, spring onion and a hint of curry paste.

Preparation Time: 20 minutes. Cooking Time: 12 minutes. Serves 4.

For the green curry paste (Makes approx. 1 cup)
2 tbsp finely chopped lemon grass (hare chai ki patti) stem
1 cup chopped coriander (dhania)
¼ cup roughly chopped onions
1 tbsp roughly chopped garlic (lehsun)
10 green chillies, roughly chopped
1 tbsp coriander (dhania) powder
2 tbsp cumin seeds (jeera) powder
½ tsp freshly ground black pepper
25mm (1″) piece ginger (adrak)
Salt to taste
½ tsp lemon juice
¼ tsp grated lemon rind

For the rice
3 cups cooked rice
1 tbsp oil
¼ cup finely chopped spring onion whites
½ cup thinly sliced and parboiled babycorn
½ cup thinly sliced capsicum
2 tbsp finely chopped spring onion greens
1½ tsp finely chopped green chillies
Salt and freshly ground pepper to taste
1 tsp soya sauce

For the coconut sauce
½ cup coconut milk (nariyal ka doodh)
2 tbsp oil
½ tsp cumin seeds (jeera)
¼ cup finely chopped spring onion whites
2 slit green chillies
1 tbsp finely chopped spring onion greens
1 tsp lemon juice

For the garnish
1 tbsp finely chopped spring onion greens

For the green curry paste
1.Combine all the ingredients and blend in a mixer to a fine paste, using enough water (approx. ½ cup). Keep aside.

For the rice
1. Heat the oil in a wok or a kadhai, add the spring onion whites and sauté on a medium flame for 1 to 2 minutes.
2. Add the baby corn and sauté on a medium flame for 1 minute.
3. Add the capsicum, spring onion greens and sauté on a medium flame for 1 minute.
4. Add the green chillies and 2 tbsp of the prepared green curry paste, mix well and cook on a medium flame for 1 minute.
5. Add the rice, salt and pepper, mix well and cook on a medium flame for 1 minute.
6. Add the soya sauce, mix well and cook on a medium flame for 1 to 2 minutes. Keep aside.

For the coconut sauce
1. Heat the oil in a broad non-stick pan and add the cumin seeds.
2. When the seeds crackle, add the spring onion whites and sauté on a medium flame for 1 minute.
3. Add the green chillies, spring onion greens and sauté on a medium flame for 1 minute.
4. Add the coconut milk, lemon juice, salt and ¼ cup of water and ½ tsp of the prepared green curry paste, mix well and cook on a medium flame for 2 minutes, while stirring continuously. Keep aside.

How to proceed
1. Put the rice into a 7″ ring mould and spread it evenly.
2. Invert the ring over a serving plate and tap sharply to unmould the rice.
3. Pour the coconut sauce in the centre and serve immediately garnished with spring onion greens.

Suggested ingredients:

12 oz of finely grated cauliflower

1 tbsp curry powder

1 tsp cumin powder

1 tbsp fish sauce (or 1 tsp salt)

1 tbsp finely chopped onions

1 tsp finely chopped fresh garlic

1 oz frozen green peas

3 oz medium frozen shrimps

How to make Restaurant Style Chicken Fried Rice

Ingredients

Basmati rice-11/2 cup(I used india gate )

Garlic-2tsp

Celery-2tsp

Spring onion white -1tsp

Spring onion green -1tsp

Capsicum-2tbsp

Carrot-1 small

Cabbage-3tbsp

White pepper powder-1/2tsp

Salt-to taste

Soya sauce-1tbsp

Vinegar-1/2tsp

Sugar-1/4tsp

Sesame Oil-1 tsp

Oil-1 1/2 tbsp

Method

Wash the rice well and soak it for 15 minutes ..

Boil water and cook the rice until done ..

Drain and allow to cool .. Then keep it in the fridge for atleast 2 hours ..

I usually cook the rice previous day evening and keep in the fridge ..

Finely chop all the vegetables ,garlic,spring onion,celery …

Now heat oil in a heavy bottomed kadai ,and add garlic

Saute for few seconds ,then add spring onion, and celery d capsicum ..

Saute for another few seconds ..Now add cabbage carrot and beans ..Then saute

Saute well and add soya sauce ,sugar,salt and vinegar..
Now add cooked chicken breast and mix well and cook for 2 minutes .

Finally add the cooked rice ..

Mix and stir well… Cook for 3-4 minutes in medium flame …

Taste it and add salt and soya sauce if needed..Finally sprinkle 1tsp of sesame oil and mix well..

Garnish with spring onion …

Easy and tasty restaurant style fried rice is ready in few minutes ..

Enjoy with ur favourite side dishes ..
